Freshly Grounded Wheat versus Atta

Is it worthwhile to buy Wheat grains and get them grounded or is the Ashirwad/Pilsbury Atta pretty close.

My husband's Chachaji who has farms in Punjab has been sending us wheat bags every month for the last few months. He thinks the readymade atta is no good.

Your thoughts/advise on is it worth the effort? more

Best to buy and then have the wheat ground, as the healthy option, what we consume or the edible portion being the seed. No need to have the grain washed, as that much dust we are anyway inhaling, living in India. Moreover, washing wastes water and energy, as thereafter before grinding, entails extra effort as grains must be dried. Wheat already cleaned by the chakki owner. I find readymade atta is much like maida, too fine, therefore, for scientific reasons, nutrient scarce. In the fineness, vitamins contained within the get exposed to air, oxidised, thus destroyed. Just inspect the hopper for cleanliness. Freshly grounded wheat releases the heat from the seed grinding, that may be allowed to cool, before storing. Moisture too gets released, while being retained partially. more  
The issue is as much of nutrition as of hygiene levels. I would try and find a solution to nutrition but not at the cost of hygiene like not washing the wheat or not changing the sock. Do you know that in local chakkis or those which are not checked, the atta that gets ground and does have certain amount of moisture, gets stuck to the inside of the sock over the time period and gets deposited. This leads to contamination and growth of harmful germs. Under ISO standard, the sock must be changed after a designated time period which in local chakki, I wonder whether they really bother / care. This could prove to be very dangerous. I would rather buy packaged atta and supplement it with other products like bajra etc to supplement its nutrition...at least the hygiene is guaranteed - No dust, grit, rodent excreta or pesticides... more

I don't recommend pilsbury to my clients when in comparison with ashirwad atta as pilsbury atta is more fine grounded thus leaving no fibre behind. If comparison between the two ashirwad is much better. Pilsbury is more like maida as it is more fine grinded more  
dear Shikha, Since you are getting wheat from a known source - you can be sure of the quality - so it is good to get it ground as and when you need it i.e fresh. The only thing is that it should be stored properly ; washed and dried before you give it for grinding. To save all these hassles these days AAshirwad / Pilsbury etc. attas are used in cities where storage , washing and drying the wheat is a problem. These are some known brands and can be used safely.
